Lunch options from Asian to Latin American cuisine, as well as upscale American entrees and hearty breakfasts, are on the spring menu at Prairie, the College of Lake County's student-managed restaurant on the Grayslake Campus. Open every Wednesday and Thursday, and on selected Mondays, Tuesdays and Fridays, Prairie is located in the Lower Level A Wing.

Breakfast is served from 8-10:30 a.m. on the following Mondays: March 4, March 18, April 8, April 22 and May 6. The menu includes five entres, from waffles to omelet of the week, including choice of coffee, tea or orange juice.

Lunches consist of a full, three-course meal with dessert. Tuesdays feature regional Asian cuisine, from the Philippines to China to Japan. Wednesdays and Thursdays provide upscale American fare, from a blackened grouper sandwich with tropical fruit slaw to a grilled ribeye steak over fingerling potatoes. The Friday menu consists of Latin American entrees, from Brazil to Peru to the Caribbean. For details on the menus, visit www.clcillinois.edu/programs/hcm/prairie.

Operated by students in CLC's hospitality and culinary management program, Prairie offers the community high-quality meals at economical prices, said Chef Rob Wygant, chair of the hospitality and culinary management programs. "It's truly win-win for everyone," said Wygant, a Los Angeles native who has worked at five-star restaurants in California, including a stint with noted chef Wolfgang Puck, before joining CLC. "We have one of the most competitively priced sit-down restaurants in the area. At the same time, students gain important hands-on experience, ranging from waiting tables to preparing food to supervising kitchen operations."
