HOW TO MAKE 1. Preheat oven to 170degC. Line muffin pans with cupcake cases.
2. Sift the flour into a large mixing bowl, add sugar. Whisk together eggs, evaporated milk, butter and vanilla essence. Add wet ingredients to flour and beat at low speed until combined then increase speed and beat for 2-3 minutes until smooth. 3. Spoon mixture into cupcake cases. Bake for 15-20 minutes. Icing and decoration: 1. Using an electric beater, cream the butter for 1-2 minutes until pale. Add icing sugar, 1/2 a cup at a time alternating with 1 tablespoon hot water and beat until fluffy, creamy and desired consistency. Tint with colouring or flavour with essence. 2. Spread icing over top of cooled cupcakes. Decorate with a sweets to form bugs, (see picture for ideas).
