Winter potato salad.

Garnish with beets just before serving. 3-1/2 pounds (6 large) thin-skinned potatoes, cut in half 1 medium-size onion, thinly sliced 1 large cucumber, thinly sliced 6 radishes, thinly sliced 1 can (6 oz.) whole ripe olives, drained Dressing (recipe follows) 1 can (1 lb.) sliced pickled beets, drained, cut into thin strips 4 to 5 large hard-cooked eggs, halved

Place potatoes with water to cover in a 4- to 5-quart pan; bring to a boil over high heat. Cover, reduce heat, and simmer until tender when pierced, 15 to 25 minutes. Drain and let cool.

Thinly sliced potatoes; place in a large bowl. Gently mix in onion, cucumber, radishes, olives, and all but 2/3 cup of the dressing. In a small bowl, combine beets with remaining dressing. Cover bowls; chill at least 2 or up to 12 hours. To serve, spoon potato mixture into a shallow serving dish. Arrange beets and eggs around rim. Serves 10 to 12.

Dressing. Mix 1 cup salad oil, 1 cup whie wine vinegar, 1/3 cup Dijon mustard, 4 teaspoons each dry basil and dry oregano leaves, 1-1/4 teaspoons celery seed, and salt and pepper to taste. Green beans with sesame seed, and coconut-chocolate bar cookies.
