Weekend Break: Recipe; Brown Betty (Serves 6).

Ingredients: 225g breadcrumbs; 900g apples; 2tbsp golden syrup; 50g margarine; 1tsp cinnamon; 1/4tsp grated nutmeg; 1 teacup water; 1 lemon

Method: Preheat oven to Preheat oven to 180c, 350f, gas mark 4.

Brush pie dish with margarine. Put layer of stale breadcrumbs at the bottom. Cover with a layer of grated apples-no need to peel apples. Pour half the golden syrup over the apples. Dot with margarine. Sprinkle with spices and the grated rind of half the lemon mixed together.

Repeat layers and put a final layer of breadcrumbs on the top dotted with margarine. Mix the juice of the lemon with a teacupful of water and pour over the pudding. Bake for 45 mins in the oven.
