We're a big fish now Chip shop wins top award.

FISH FRYER Alan Jackson is the Codfather - and that's official!

The Redcar fish and chip shop he runs with wife Rita has joined the UK fish frying elite by scooping a Fish and Chip Quality Award.

Small Fry, on Westmorland Road, which only fries cod, is the first chippie in the Cleveland area to receive the star award and one of only a handful in the UK.

The Jacksons say quality crinkle cut chips, the best fish, and beef dripping are the bed rock for success.

The couple also run the award-winning Hutton Lane Fish Shop in Guisborough and have honed their skills over many years.

Alan, 52, said: "Attention to detail in preparation is everything.

"We run a limited menu and open the shop for about 20 hours a week. This keeps the frying medium in peak condition.

"We use traditional beef dripping to fry in.

Ours is the best from Holstein cattle fed on meadow grass. After each use we filter it before the next frying session to take out any carbon particles.

"We only fry cod, guaranteed from a sustainable source."

Dedicated Alan pulls all bones out instead of cutting them out to give a superior fillet.

The National Federation of Fish Friers - the trade body representing the nation's fish and chip shops - runs the award to raise standards in the trade. The award also promotes high standards of hygiene.

To qualify, each shop has to go through a meticulous inspection by an NFFF approved assessor, covering well in excess of 100 points of the shop's presentation, hygiene and cleanliness, staff training, equipment, frying and sales skills and, most importantly, the quality of the cooked product.

Bill Crook, NFFF national president, said: "This award sets the new benchmark for quality in the industry.

"It signals to the consumer that they can buy with confidence where the award is displayed and will encourage more outlets to raise their standards."

Each Quality Award is valid for two years and retention is dependent on standards being maintained.

Alan and Rita will be frying samples for people to try free next Monday at the shop from 5-7pm.
