This Friday is the 4th of July - so what better way to celebrate American Independence Day than with a recipe from writer Jackie Collins' ultimate American heroine, Lucky Santangelo?

JACKIE COLLINS'LUCKY SANTANGELO BAKED PEACHES WITH COINTREAU

'I'm making you a dessert,' Lucky said. 'What have I done to deserve it?' Lennie said... Lucky gave a secretive smile. 'It's not what you've done,' she said. 'It's all about what you're going to do.' Even a bonkbuster goddess knows the way to a man's heart is through his stomach.

Preheat oven to 150degC (gas mark 2). Peel 1-2 peaches per person (white ones if possible), then leave them whole.

Warm peaches in the oven during dinner for about 30 minutes.

Drizzle with 4-6 tbsp of Cointreau and serve with good vanilla ice cream.
