The udder alternative: the soy dairy case. (Brand-Name Rating).

Five years ago, you'd have to dig around in the dairy case to find even a single brand of soy milk or cheese. Today, it's Soy City.

It's not clear what has spurred the sudden invasion of soy frozen desserts and yogurts, cream cheeses and sour creams. In 1999, the Food and Drug Administration gave the industry a green light to claim that soy can help reduce the risk of heart disease by lowering cholesterol levels. But you'd have to consume the equivalent of four cups of soy milk a day to get only a six percent drop in your LDL ("bad") cholesterol. Odds are, most people aren't eating soy to save their hearts.

More likely, it's the buzz that soy can prevent breast cancer or protect the prostate or curb the symptoms of menopause or build strong bones. So far, none of those promises has been borne out by research (see "Got Soy?" page 8).

Still, soy has hung on to its image as a healthy alternative to dairy foods. Though dairy still dwarfs soy consumption, soy has great PR. In certain health-conscious circles, it's clearly ahead in the polls.

Of course, soy dairy foods do have some undeniable assets. Soy milk is lower in saturated fat than (all but fat-free) cow's milk. Soy protein does help lower cholesterol modestly. And people who have trouble digesting lactose, the naturally occurring sugar in milk, should have no trouble with soy. Ditto for people who are allergic to milk protein, as long as they read their labels carefully (some soy cheeses, cream cheeses, and sour creams contain the milk protein casein).

What's more, growing soy takes less of a toll on the environment than raising dairy cows. And some animal welfare activists avoid dairy because they object to the way most cows are raised.

But the evidence that cow's milk is harmful--beyond its saturated fat--is flimsy. On the contrary, low-fat dairy foods can help lower blood pressure, and their calcium strengthens bones. And milk is more nutritious than soy dairy foods, unless they're fortified.

We took that into account when we set criteria for Best Bites in the soy aisle. Just because a soy food looks--and sometimes tastes--like its milk counterpart, you can't assume that it's identical.

MILK

Shopping for soy milk is more complicated than picking up a carton of skim. Here's what to consider:

* Calories. An eight-ounce cup of fat-free or low-fat cow's milk has about 100 calories. Most unflavored soy milks have about 120 calories, but the range is wide (60 to 200). While the unsaturated fat in soy milk doesn't clog arteries, it does add calories. So does sugar.

Sweetened flavors, especially chocolate, range from about 100 to 200 calories per cup. (A cup of low-fat chocolate cow's milk has about 150.) We set no limit on calories for our Best Bites, so check the label before you drink.

* Sugar. A cup of unsweetened soy milk has little or no sugar. But don't confuse unsweetened with "plain" or "original," which means no flavor, like vanilla or chocolate. Original (or plain) soy milks often contain brown rice syrup or cane juice, which gives each cup 4 to 14 grams of sugar. Many are close to the 12 grams of naturally occurring lactose that you'd get in cow's milk. Our Best Bites have no more than 20 grams (five teaspoons) of sugar.

* Protein. Unlike fat-free cow's milk, which has all the nutrients of whole milk (except fat), fat-free or light soy milk often has less protein than full-fat versions. That's because some protein is lost when the fat is removed and the drink is diluted (most companies add water). Some fat-free or light soy milks have only four to five grams of protein per cup, instead of the seven grams in full-fat soy milk or the eight to ten grams in cow's milk. Our Best Bites have at least seven grams of protein.

* Vitamins and minerals. Milk (from the cow) is packed with nutrients, as you might expect from a food that has to singlehandedly nourish a baby mammal. One cup has a nice chunk of calcium (30 percent of a day's worth), riboflavin (25 percent), vitamin D (25 percent), vitamin B-12 (15 percent), magnesium (10 percent), potassium (10 percent), vitamin A (10 percent), and zinc (5 percent). (The A and D are typically added by milk processors.)

Most fortified soy milks have about as much calcium, vitamin A, and vitamin D as cow's milk. Some are also fortified with riboflavin and vitamin B-12. And many (whether fortified or not) have about the same amount of magnesium, potassium, and zinc as cow's milk.

We gave Best Bites to soy milks with at least 30 percent of a day's calcium, 15 percent of a day's vitamin B-12, and 20 percent of a day's vitamin D--about what you'd get in a cup of cow's milk.

* Taste. Taste is in the tongue of the taster, as they say. But some brands, like Vitasoy, are clearly chalkier than others. In contrast, 8th Continent, Belsoy, Silk, Sun Soy, WestSoy, and Zen Don are reasonably good. Silk and Zen Don make the best-tasting plain Best Bites, while 8th Continent makes the best chocolate (it missed our sugar cut-off by just one gram).

Best Bites: No more than 1 1/2 grams of saturated fat and 20 grams of sugar, and at least 7 grams of protein, 30% of a day's calcium, 20% of a day's vitamin D, and 15% of a day's vitamin B-12 in an 8-ounce cup.

CHEESE

Each ounce of a full-fat cow's milk cheese like cheddar has seven grams of saturated fat--a third of a day's worth. A 3/4-ounce slice of Kraft American Singles has three grams (Kraft 2% American Singles has two grams). Sat fat isn't generally a problem for soy cheese. Most brands have half a gram or less.

Soy cheeses have their own problems. If they're unfortified (about half are), they have little or no calcium. And some brands are low in protein--especially if they aren't made with casein (milk protein).

But soy cheese's biggest issue is taste. Most brands--like Veggie Slices and Veggy Singles--taste no better than plastic-wrapped American cheese. They're barely distinguishable from each other, despite names like Swiss, cheddar, and Monterey Jack. Only jalapeno cheeses stand out. The kick covers up for their overall lack of cheesiness.

Some brands, like TofuRella, are barely edible. Others, like Lisanatti Premium Soy-Sation and (non-Best-Bite) Soya Kaas, are a cut above the rest. But none come close to even a decent store brand of cheddar, never mind havarti or Jarlsberg.

One caution: Cross Tofutti brand soy cheese off your shopping list. Each 2/3-ounce slice has two grams of saturated fat. And its main ingredient (after water) is partially hydrogenated soybean oil, which could add (artery-clogging) trans fat. That makes it worse than a reduced-fat milk-based cheese like Kraft 2% Singles.

Best Bites: No more than 1 gram of saturated fat and at least 6 grams of protein and 20% of a day's calcium per ounce (or 4 grams of protein and 15% of a day's calcium per 2/3- or 3/4-ounce slice). They also contain no partially hydrogenated oil.

CREAM CHEESE & SOUR CREAM

A good tasting soy cream cheese would be more than welcome on the bagels of health-conscious eaters. A real cream cheese like Philadelphia has six grams of saturated fat, assuming you use only two tablespoons (one ounce). Light cream cheese has half as much. Fat-free has zero.

We found four brands of soy cream cheese--Soya Kaas, Tofutti, Vegan, and Veggie--with no more than two grams of sat fat. But only the Soya Kaas tasted good. (Actually, so did the Tofutti, but it doesn't earn a Best Bite, since it's made with partially hydrogenated oil, which could easily add a gram or two of trans fat.)

As for soy sour creams, don't bother. They were uniformly gummy and un-sour-cream-like, even when we tried to revive them by adding onion dip mix.

Best Bites: No more than two grams of saturated fat in two tablespoons, and no partially hydrogenated oil.

YOGURT

Only one brand of soy yogurt, Silk, had enough calcium to meet our Best Bite cut-off (18 percent of a day's worth in a six-ounce container). But it didn't knock our tastebuds off, to put it mildly. Nancy's Cultured Soy, on the other hand, was delicious, especially the Strawberry and Mango. Too bad it's not fortified with calcium. (Most soy yogurts are called "cultured soy," since it's illegal for companies to use the word "yogurt" in the names of their foods unless they're dairy-based.)

Best Bites: At least 3% of a day's calcium and no more than 5 grams of sugar, 1/4 gram of saturated fat, and 30 calories per ounce.

FROZEN DESSERTS

You don't have to be a dedicated soy lover to love soy frozen desserts. Just watch out for the calories in the high-fat lines like Soy Delicious Purely Decadent and Tofutti Premium. (And don't forget that labels list an optimistic half-cup serving.)

Best Bites: No more than 2 grams of saturated fat and 300 calories per cup.

SOY BE IT

Within each category, products are ranked from best to worst. For soy milk and yogurt, that means from most to least calcium and protein, then least to most sugar and calories. For cheese, cream cheese, and sour cream, that means from least to most saturated fat, then most to least calcium and protein. And for frozen desserts, that means from least to most saturated fat, calories, and sugar.
