Bear bowl Cuddly and comforting like your favourite teddy, this breakfast dish is packed with healing ingredients. It's a good balance of carbs, fats and protein - 344 calories.
Ingredients: 2 eggs, 1/2 sweet potato, 30g spinach, 100g cooked quinoa, 1 tsp mixed seeds, salt and freshly-ground black pepper. Method: 1. Bring a pan of water to the boil, gently lower in the eggs and cook for 7 minutes. Once cooked, transfer the boiled eggs to a bowl of cold water and, when cool enough to handle, peel off the shells.
2. Cut a criss-cross in the sweet potato and pop it in the microwave for 5-7 mins on high. 3. Steam the spinach in a steamer set over a pan of boiling water with the lid on until wilted for 2 minutes.
4. Combine sweet potato, spinach and quinoa in a large bowl and toss everything together. 5. Spoon the sweet potato and quinoa mixture into a bowl and top with the boiled eggs, mixed seeds and drizzle of olive oil. Season with salt and pepper. This dish also works well with poached eggs instead of boiled.
