To cook: Pre-heat the oven to 180C/Gas 4. Place the joint on a trivet in a roasting tin, rind uppermost. brush with oil and sprinkle with salt to ensure crispy crackling. open-roast for the calculated time. Do not cover and do not baste, or you'll get soft crackling.
