 LABOR DAY COLE SLAW
 1 small head green cabbage (makes about 4 cups shredded)
 1 large carrot
 1/4 cup fresh parsley
 1 cup low-fat buttermilk
 1/4 cup low-fat sour cream
 1/2 teaspoon salt
 1/2 teaspoon dry mustard
 1/2 teaspoon poppyseeds
 1/4 teaspoon freshly ground black pepper
 Shred cabbage and carrot in Braun UK280 fitted with shredder attachment. Set aside in large bowl. Mince parsley in food processor fitted with metal blade. Add all remaining ingredients (except cabbage) and process until blended. Pour dressing over cabbage and mix well. Garnish with parsley if desired. Refrigerate before serving.
