Inspired by local produce, the menu comprises seared scallop, braised leek, confit chicken wing, nasturtium oil; buttered asparagus, parsley, buttermilk, truffle; gigot of lamb, peas, lettuce, wild asparagus, cockles; roasted halibut, sea herbs, confit potato; raspberry cheesecake, elderflower sorbet as well as strawberry parfait, champagne poached strawberries. The lamb is from award-winning Edge Butchers in Birkenhead.
The tasting menu is priced at PS80 per person, or PS125 per person including a wine flight. The a la carte menu is PS55 for three courses.

Head chef Matt Walsh says: "We've tried to change things around, taking a few dishes off to allow us to bring in some new flavours."
New dishes include roasted peach, stilton and walnut salad with honey and thyme dressing (PS4.50), prawn and chilli butter crostini (PS2.95) and spicy salami, chilli and mozzerella pizzette (PS5.50).
There are new puddings too, with lemon posset with chocolate crumble and blueberry compote (PS4.95).
