Soup secret is a pint of creamy yogurt.

You finish this simple soup with a pint of yogurt to give it a pleasant tartness and fortify it with extra protein. Chicken-Noodle Yogurt Soup

2 Tablespoons salad oil

1 large onion, chopped

2 quarts regular-strength chicken broth

3 chicken bouillon cubes

3 cloves garlic, minced or pressed

1 teaspoon thyme leaves

1/4 teaspoon each pepper and dill weed

4 or 5 sprigs parsley

3 small carrots, sliced

6 ounces dry wide egg noddles

3 cups cubed cooked chicken

2 cups unflavored yougurt

2 tablespoons cornstarch

Sugar (optional)

6 to 8 green onions (including tops), chopped Pour oil into a 5- to 6-quart kettle set over medium heat; add onion and cook, stirring, until soft, about 10 minutes. Add broth, bouillon cubes, garlic, thyme, pepper, dill, parsley, and carrots. Cover and bring to a boil; then reduce heat and simmer until carrots are tender when pierced, about 30 minutes. Discard parsley and add noodles; cook, uncovered, until tender to bite, 8 to 10 minutes. Add chicken and keep hot. Stir yogurt into cornstarch, then mix in 1 cup of the hot broth. Return to soup and bring to a boil, stirring. Taste and, if desired, add a little sugar to smooth out flavor. Serve hot. Garnish with green onion.
