Cope, who hails from western North Carolina, brings nearly 15 years of culinary experience to the job. Prior to arriving at Sleeping Lady, Cope served as executive banquet chef at Old Edwards Inn & Spa in Highland, N.C., and as executive chef at the Millstone Inn in Cashiers, N.C. He spent time with Bon Appetit Management Company. Cope also served as a consultant to the Majestic Inn & Spa in Anaeortes, Wash., where he helped the property develop relationships with local farmers.

Cope is also an avid gardener, and in his role at Sleeping Lady, he works directly with the gardening staff, who tend the resort's 2-acre organic garden and greenhouse.
