Skewered beef with apple and lettuce.

Eat beef and apple wrapped in lettuce. 2 pounds boneless beef chuck 1 piece (1-in. cube) ginger, peeled 1/4 cup soy sauce 2 tablespoons dry white wine 2 tablespoons firmly packed brown sugar 1 tablespoon sesame seed 1/2 tablespoon Oriental sesame oil 1 to 1-1/2 tablespoons hot chili oil or 1/2 teaspoon cayenne Butter lettuce leaves, washed and chilled 1 large apple, cored and sliced

Trim fat from beef and discard. Cut meat into 1-1/2-inch chunks. Mince ginger. In a bowl, blend ginger, soy, wine, sugar, sesame seed, sesame oil, and chili oil to taste. Mix in beef; cover and chill up to 2 hours. Thread beef equally onto 4 skewers. Pour marinade into a 1-1/2- to 2-cup pan. Place meat and pan on a barbecue grill 4 to 6 inches above a solid bed of hot coals (you should not be able to hold your hand over grill more than 4 seconds). Cook meat on all sides until browned and pink in center (cut to test), about 8 minutes; brush often with marinade. Push beef off skewer onto a platter and eat out of hand, wrapped in lettuce leaves with apple slices. Serves 4.
