Sesame-coated tuna with salsa (serves 1); Recipe.
INGREDIENTS: For the tuna: 140g/5oz fresh tuna steak; sea salt and
freshly ground black pepper; 25g/1oz sesame seeds; 1tbsp good quality
extra virgin olive oil. To make the salsa: - red onion, finely chopped;
' avocado, stone removed, cut into small chunks, approx 1cm across;
' tomato, chopped into similar sized pieces; 1tbsp good quality
extra virgin olive oil; 'tsp balsamic vinegar; fresh flat-leaf
parsley, roughly torn, to garnish METHOD: For the tuna, place the tuna
on a plate, season, to taste, with sea salt and freshly ground black
pepper. Sprinkle over half of the sesame seeds onto one side of the
tuna, patting them onto the tuna steak, then repeat on the other side.
Heat the oil in a griddle pan until smoking. Add the tuna and cook over
a high heat for two minutes on each side, or until cooked to your taste.
To make the salsa, place all the ingredients into a bowl and stir to
thoroughly combine. To serve, remove the tuna from the pan and place
