Sausage Cheese Squares

Eat this custard hot as an entree or cool as an appetizer.

2 pounds mild or hot Italian sausage

1 large onion, finely chopped

2 cloves garlic, pressed or minced

1/4 pound mushrooms, sliced

1/2 teaspoon each dry basil, dry mint, and dry oregano leaves

1/4 cup chopped parsley

8 eggs

1/3 cup fine dry bread crumbs

1/4 cup grated Parmesan cheese

4 cups (1 lb.) shredded mozzarella cheese

Remove casings from sausages and crumble meat into a 10- to 12-inch frying pan. Stir over medium-high heat until browned. Drain off and discard all but 2 tablespoons fat. Add onion, garlic, mushrooms, basil, mint, oregano, and parsley; stir until limp. Beat eggs to blend. Stir in bread crumbs, Parmesan cheese, mozzarella, and sausage mixture; spread out evenly in a 10- by 15-inch baking pan. Bake in a 325| oven until mixture is firm in center when touched, 30 to 35 minutes. Serve hot for an entree; cut into large rectangles for 9 servings. Let cool for appetizer; cut into 1-inch squares to make 150 pieces.
