HERBY LOW-CARB MEATBALLS IN MARINARA A healthy version of the Italian classic with 436 calories per serving. Serves 3-4.
INGREDIENTS Low-cal fry spray or a little oil for the tin, 1 med cauliflower cut into florets, 600g lean beef mince, 50g grated parmesan cheese, small bunch of finely chopped basil and/or parsley with extra to serve,1 tsp dried oregano, 1 tsp smoked paprika, salt and pepper, crushed or grated garlic clove, a beaten egg, 1/2 very finely diced red onion. For the sauce: 1/4 tsp olive oil, 1/2 small sliced onion, 350g tomato passata, 1/2 tsp dried oregano
1. Preheat oven to 200C. Line large baking tin or ovenproof dish with foil, spray with low-cal fry spray or use a little oil.
2. Grate the cauliflower or pulse it in a food processor until it resembles rice, transfer to a large bowl. Add remaining ingredients and scrunch together thoroughly with your hands to combine into a mixture.
3. Roll mixture into 20 balls, put in prepared tin in a single layer. Bake for 20 minutes until golden and browned all over.
