INGREDIENTS (SERVES 4) 4 stem ginger biscuits 20g butter, melted 4 Waitrose large passion fruit 250g pack Essential Waitrose Creamy Soft Cheese 150g Greek-style coconut yogurt 3 tbsp icing sugar METHOD 1. Break the biscuits into coarse crumbs and mix with the melted butter. Divide between 4 glasses and place in the fridge for 5 minutes. 2. Meanwhile, halve the passion fruit and scoop out the pulp and seeds and set this aside.

3. Beat together the soft cheese, yogurt and icing sugar until smooth then stir in half the passion fruit. 4. Divide between the glasses and spoon over the remaining passion fruit. Chill until ready to serve.

Cook's tip Try the soft cheese mixture and add more or less icing sugar to suit your taste and balance the tart flavour of the passion fruit.
