MACADAMIA BREAKFAST PARFAIT AN alternative to bought cereal, macadamia nuts contain essential fatty acids. Serves 4. Prep time: 20 minutes, plus overnight soaking Ingredients 100g macadamia nuts, 480ml water, 1/2 tsp fine sea salt, 4tbsp sunflower seeds or other soaked seeds, 4tbsp shredded coconut, 120g pomegranate seeds, 360g Greek yogurt, 2tbsp milled flaxseeds, 180g berries or sliced bananas. Optional: manuka honey, cacao nibs, ground cinnamon Method 1 Put the nuts in a bowl with 350ml of water and a half teaspoon salt. Soak overnight.

2 Put the sunflower seeds, remaining water and a pinch of salt in a cup and soak overnight. 3 Take four serving glasses or bowls and layer each one as follows: 1tbsp shredded coconut, 3tbsp pomegranate seeds, 3tbsp yogurt, 1tbsp soaked sunflower seeds, a half tbsp flaxseeds, 3tbsp berries and 21/2 tbsp macadamia nuts. 4 Serve as is or top with manuka honey, cacao nibs and/or ground cinnamon.
