All Lagarde systems feature highly accurate process control systems that utilise overpressure to equalise the pressure outside the tray to that being created in the tray by the cooking process. Using fan-assisted steam, the Largarde retort has a cooking range of over 20 products. The machine also cools products down using chilled water, to as little as 5[degrees]C The process controller accurately records all parts of the process and can send the information to a printer or remote manufacturing computing system.
An additional benefit is the use of a two-door, transit style machine that allows processed product to be discharged through the wall into a high-risk zone without having to be handled in low risk.
Largarde have been cooking in plastics and pouches for over 30 years and have machines to handle product types such as rice and vegetable in pouches, Doypacks of soups, sauces and meat products, Cpet and Polypropylene recipe dish trays, and of course cans and jars.
