10 egg yolks
2 whole eggs
7.5 oz castor sugar plus some for caramelising
2 vanilla pods split with seeds out
Place cream, vanilla seeds and pods in a pan and bring up to the boil.
Meanwhile in a bowl mix the egg yolks, whole eggs and sugar together with a whisk. Once the cream has boiled pour on to sugar mix and whisk until sugar has dissolved. Pass through a sieve and pour into ramakins which then need to go in the oven on a deep tray with a little water in for 1 hour at 100AC or gas mark 1.
Leave to cool, caramelise with the rest of the sugar and serve immediatley.
