Recipe; Red pepper and courgette tortilla.
Method: Preheat grill to high and heat oil in a non-stick frying pan. Add spring onion, pepper, courgette and potatoes. Saute for 2-3 minutes until pepper has softened and potatoes are heated through. Stir in thyme and basil, season to taste and cook for a minute. Lightly beat eggs with pinch of seasoning. Add to pepper mixture and cook for a few minutes, stirring until eggs begin to set. Spread mixture evenly over pan and press down gently with a fish slice. Sprinkle over Parmesan and place tortilla under grill until slightly puffed. Cut into wedges to serve.
