 VEGETABLE CHEESE FAJITAS
 1 cup each sliced yellow and red
 peppers
 1 cup zucchini, cut in strips
 3/4 cup onion, sliced
 1 garlic clove, minced
 3/4 teaspoon jalapeno pepper,
 minced
 3/4 teaspoon chili powder
 Salt to taste
 2 flour tortillas
 1 ounce Jarlsberg (or Jarlsberg Lite) cheese, shredded
 Vegetable cooking spray
 Coat medium skillet with cooking spray/heat peppers, zucchini, onion, garlic and jalapeno adding small amounts of water if necessary, until soft. Add chili powder and salt. Divide vegetable mixture between tortillas. Sprinkle 1/2 ounce cheese on each and roll up.
 MUSHROOM PIZZA
 3 tablespoons diced green peppers
 1 garlic clove, minced
 1/2 cup sliced mushrooms
 3 tablespoons fresh diced tomatoes
 1 tablespoon chopped parsley
 Salt and pepper, to taste
 1 6-inch pita bread
 1 ounce Jarlsberg (or Jarlsberg Lite) cheese, shredded
 Vegetable cooking spray
 Coat medium skillet with vegetable spray and heat peppers, garlic, mushrooms and tomato, adding a small amount of water if necessary, until soft. Add parsley, salt and pepper. Distribute mushroom mixture on top of pita bread. Sprinkle on cheese. Put pizza on baking sheet and bake at 350 degrees Fahrenheit for 20 minutes or until cheese melts.
