Mushroom pasta & anchovies

Ingredients

50g (2oz) butter

12 tbsp olive oil

50g (2oz) mushrooms, sliced

4 canned anchovy fillets, drained

175g (6oz) pasta, preferably pappardelle

1 large sundried tomato, finely chopped

Small stem rosemary, leaves finely chopped

Cooking

1. Heat half the butter and the olive oil in a large saucepan. Add the sliced mushrooms and cook gently until softened, then remove and set aside.

2. Add the rest of the butter to the pan with the drained anchovies and cook over a low heat - it should take about 2 mins.

3. Cook the pasta in a large pan of boiling salted water for 8-10 mins. Drain thoroughly, then put straight back in the pan.

4. Toss with the anchovy butter, sliced mushrooms, sundried tomato and chopped rosemary.

5. Season well and serve immediately.

Spaghetti with tuna & capers

Preparation: 5 mins

Cooking: 25 mins

Ingredients

3 garlic cloves, skin on

1 tbsp olive oil

175g (6oz) spaghetti

50g (2oz) canned tuna, well drained and lightly flaked

Zest and juice of half lemon

12 tbsp capers

A few caper berries, to garnish

Cooking

1. Pre-heat oven to 200 deg C, Gas 6, fan oven 190 deg C.

2. Put the garlic on a roasting tray and roast for 20 mins until soft. Let it cool a little, then carefully squeeze the cloves out of their skins and mix with the olive oil.

3. Cook pasta according to pack instructions and drain, then toss with the olive oil and garlic, tuna, lemon zest and juice and capers.

4. Stir to combine, season to taste and top with some caper berries before serving.

Macaroni, bacon & spinach

Preparation: 5 mins

Cooking: 30 mins

Serves: 2

Ingredients

175g (6oz) macaroni

1 tbsp olive oil

Small onion, finely sliced

Pinch garlic salt

2 rashers smoked bacon

50g (2oz) fresh spinach

75g (3oz) strong Cheddar cheese

50g (2oz) breadcrumbs

Cooking

1. Pre-heat oven to 190 deg C, Gas 5, fan oven 180 deg C. Cook the pasta according to packet instructions, drain and set aside. Keep warm.

2. Heat the oil in a large frying pan, add the onion and garlic and cook for 2-3 mins. Remove. Add the bacon and cook until browned but not crisp. Stir through spinach until it wilts.

3. Spoon pasta into an ovenproof dish, layer with the onions, bacon and spinach. Stir to combine.

4. Sprinkle over 2oz of cheese, top with crumbs and remaining cheese. Bake in oven for 15-20 mins.
