Q What is the difference between hollandaise and bearnaise sauce? I would like to try making bearnaise.

A Bearnaise sauce is really just hollandaise with tarragon through it. You can do this by using tarragon vinegar instead of white wine vinegar, adding fresh tarragon at the end, or both.

Q If I was going to spice up my apple sauce for my roasts, what would be the best spices to use? A Warm spices like cinnamon, nutmeg or all spice would work well, as would a little star anise.

QI'd like to try making lemon posset at home. Is it easy? AA posset, whether lemon, grapefruit or lime, is one of the easiest desserts ever. You just boil cream and sugar together then add lemon juice and zest, whisking until thickened, pour in glasses and set in the fridge.

A Royal icing is what you would find covering a traditional Christmas cake. It's made by beating egg whites, icing sugar and lemon juice together.

Q What kind of potatoes do you put on top of a Lancashire hot pot? Is it mashed? A No, it's just sliced potatoes that go on top of the lamb stew in a casserole dish. Dot them with butter and they crisp up as the hot pot cooks.
