Prawns with red peppers (Serves 6).

3 large red peppers

1 tablespoon olive oil

30 raw Mediterranean or other large prawns, peeled and deveined

6 tablespoons orange juice

salt and pepper

Bring a large pan of water to the boil. Add the peppers and cook for 5 minutes, then drain, peel with a sharp knife, halve and deseed. Cut the flesh into thin strips.

Heat the olive oil in a frying pan, add the red pepper strips and season with salt and pepper. Cover and cook over a low heat for 5 minutes.

Add the prawns and orange juice to the pan and cook, uncovered, for a further 2 minutes.

Season to taste with salt and pepper and serve immediately.
