It is time for fresh-from-the-garden homegrown tomatoes in Mississippi, and no matter how you slice them, everyone loves a BLT. We love a fried green tomato sandwich or salad with a zesty remoulade sauce. So head to your garden or the local farmers market, and enjoy a slice of summertime!


1/2 cup all-purpose flour
1/2 cup burtermilk
1/2 cup Panko bread crumbs
Salt and black pepper to taste
Oil for flying
2 to 3 green tomatoes, sliced 1/2 inch
thick (discard ends)

Place flour, buttermilk, and breadcrumbs with salt and pepper into 3 separate bowls. Heat about 1/2 inch of oil in a skillet over medium heat. Dip each tomato slice into flour, then buttermilk, then breadcrumbs with seasonings. Fry in hot oil for 3 to 4 minutes per side or until crisp and lightly brown. Drain on paper towels. Serve on sandwich or with salad greens and Zesty Remoulade Sauce. Yield: about 8 slices


1 shallo finely chopped
Zest and juice of 1 lemon
1/2 teaspoon garlic powder
1/2 cup mayonnaise
1 to 2 teaspoons Cajun seasoning
Salt and black pepper to taste

In a small bowl, combine shallot, lemon zest and juice, garlic powder, mayonnaise, and Cajun seasoning. Stir to thoroughly combine, and season with salt and pepper to taste.

Yield: about 1/2 cup
