Our Family favourite.

WITH the winter months fast approaching, there is one dessert that is sure to keep Nicola Rowlands (pictured above) warm.

Although the 24-year-old account manager for Ubiguity PR can count the number of meals she is able to cook on one hand, she insists her bread and butter pudding is something special.

She says: "It all started after reading Delia Smith's How To Cookbook.

"I looked at the main courses and got rather scared so skipped straight to the desserts and that's when I found what would soon become my signature dish!"

Nicola shocked family and friends by making the pudding unassisted when she cooked it for the first time.

"They couldn't believe that I had made it and it was delicious.

"The great thing is it is cheap, very tasty and can be served hot or cold."

Bread and butter pudding

Ingredients: 7 slices of bread and butter ;1 litre milk; 4oz sugar; 4oz raisins (oryou can use chunks of chocolate); 3 eggs.

Method: Pre-heat your oven to 170degC/gas mark 3.

Butter a large baking dish. Spread butter generously on one side of each slice of bread and then line the bottom and the sides of your ovenproof dish with the buttered bread.

Sprinkle the raisins all over the bread. Mix the milk, eggs and sugar and then pour the mixture over the bread.

After allowing the dish to stand for about 15 minutes, put it in the oven for 30 minutes until the top of it becomes a deep-golden colour.

Serve hot or cold with clotted cream, thick whipped cream or custard.
