New spin on spa cuisine.

This isn't your typical bland-but-good-for-you spa fare. Rancho La Puerta in Tecate, Baja California--one of the top destination spas in the world--is known for beautiful, light, nutritious cuisine that's delicious by any standard. In July, the spa will debut an on-site cooking school, giving guests a way to bring home those memorable flavors. The poetically named La Cocina Que Canta ("the kitchen that sings") sits in the midst of a 6-acre organic farm, with the sounds of burbling stone fountains drifting through open windows. Just-picked fruits and vegetables along with seafood straight from the nearby Pacific are the ingredients for hands-on lessons in dishes that practically vibrate with healthfulness: seafood skewers on rosemary sprigs, roasted red pepper soup, intense fruit sorbets. Then you and your fellow students sit down to feast, with the mountains as a backdrop. Weeklong packages from $3,115; www.rancholapuerta.com or 877/440-7778.
