New preglazed pastries from Vandemoortele.

FROZEN pastry and dough producer, Vandemoortele, has developed a pre-glazed pastry range for its frozen danish, croissant and sweet pastries.

Vandemoortele has introduced this time and money saving technique following extensive product development at its R&D facility in Belgium. The glaze is applied during production which creates a nice, shiny, extra crisp product on baking.

This pre-glaze, unlike the conventional hot apricot glaze which is applied after baking, allows the real taste of the pastry and filling to come through. Baking methods are unchanged, so it's even more convenient--taking less time, and using less raw materials.

"This technique will save bakers real time and money. Extensive trialing of the pre-glazed products proves that this unique glaze is also highly beneficial--products do not stick to each other or to their packaging, so product damage is minimised and handling is easy. Above all, the visual presentation after baking is excellent, which helps boost sales", says Simon Attwell, Product Manager.
