New Technologies for the Food and Drink Industries.

Last May the Campden Food and Drink Research Association held a symposium at Stratford-upon-Avon. This successful event attracted a goodly number of delegates and the Proceedings of that event have now been published.

Delegates had five sessions of lectures over the two days and these sessions carried generic titles: Developments in raw materials; Novel food preservation systems, part 1; Developments in packaging systems; Novel food preservation systems, part 2; and Developments in sensors and instrumentation. And there were also poster presentations.

Following a guest lecture on The safe introduction of novel foods and processes, the other lectures were entitled: Food ingredients from micro-algae; Sucralose - properties and applications; Genetic engineering for novel foods; Developments in mariculture and aquaculture; Natural food grade preservatives - sources and potential applications; Recent developments in high pressure food processing; Masterspice - extruded low count spices; Food safety through Micromaster and global food sourcing; Practical examples of new energy efficient technologies; The vapeur sous vide canning process - leaning on technical innovations; Improving the integrity of plastics containers utilising easy-opening ends; Recent developments in MAP; Single sealing systems for improved heat sealing integrity; Edible films and coatings from natural biopolymers; Developments in microwave pasteurisation tempering and thawing of foods; Microwave sterilisation - recent developments; Spouted bed dryer for liquid foods; Finite element analysis of radiant freeze drying; The use of optical analysis for the rapid detection of micro-organisms; AOTS (acoustic optical tuneable scanning) technology - the new process control scanner; Transputers for high speed grading; and An overview of image capture techniques which are appropriate for control systems used in the food industry.

Like all symposia, the value of the event is greatly enhanced by being present to hear all the questions and answers and join in the discussions. However, if you were not able to attend the event then the next best thing is to purchase a copy of the Proceedings, as now published.
