Munch on Mushrooms.

Mushrooms can be prepared in many different ways to enjoy as a snack, breakfast or dinner

Creamy mushroom pasta bake

Ingredients

400gm penne pasta, 200gm cremini mushrooms -- sliced

2tbsp unsalted butter, plus more for greasing, 2 cups homemade cream of mushroom soup

4 sprigs fresh thyme, 1AaAaAeAa' cups shredded white cheddar chee

Method

Cook the pasta in a large pot of boiling salted water to al dente. Drain and return to the pot. Preheat the oven to 200AaAaAeAa;C. Grease a baki dish generously with butter. In a frying pan, melt the butter and saute the mushrooms and thyme, with a pinch of salt, until the mushrooms are tender. Remove the thyme stems. Add the mushrooms, soup and 1 cup cheese to the cooked pasta. Stir to combine and transfer to the prepared baking dish. Sprinkle evenly with the remaining cheese. Bake until bubbly and golden -- about 20-30 minutes.

Mushroom on toast

Ingredients

500gm button mushrooms, 8 slices bread

100gm grated cheese (any type)

2 tomatoes, 1 capsicum, 1 onion

2-3 sprigs coriander leaves -- chopped

AaAaAeAa-tsp red chilli powder, salt -- to tas

3tsp butter, AaAaAeAa' cup whipped cur

Method

Chop the mushrooms, tomato, capsicum and coriander leaves. Toast bread slices in a toaster. Heat butter in a pan and when it melts, add mushrooms, tomato and capsicum in it. Fry for 2 minutes. Then add cheese, red chilli powder, curds and salt. Stir continuously and cook until water dries up. Then remove from fire and spoon over slices of toast. Garnish with chopped coriander leaves. Serve hot.

Mushroom and shrimp skewers

Ingredients

500gm medium size shrimps -- peeled, deveined

250gm mushrooms, 2tsp ginger garlic paste

2 capsicums -- different coloured

AaAaAeAa'tsp chilli flakes or 1tsp chilli powd

AaAaAeAa'tsp turmeric powder, AaAaAeAa' tsp ground all-s

Juice of half lemon, 2-3tbsp vegetable oil

12-15 bamboo skewers, 1tbsp minced parsley

Salt -- to taste

Method

Marinate the shrimps with salt, ginger-garlic paste, chilli flakes/powder, turmeric, all-spice and lemon juice, and set aside for 30 minutes. Chop the capsicum into strips and keep the mushrooms whole. Remove the shrimps to another plate and, in the remaining marinade, add the mushrooms and capsicum strips and toss well. Now assemble them on the skewers in any desired pattern. Grill over a charcoal grill or on a high rack in the oven for 2-3 minutes on each side. Remove, garnish with chopped parsley, and serve hot.

Spicy mushrooms

Ingredients

1 cup white button mushrooms -- sliced

AaAaAeAa' cup green pe

1 cup minced onions

2 cups minced tomatoes

2tsp ginger-garlic paste

2 green chillies -- slit

2 sprigs curry leaves

AaAaAeAa'tsp mustard seeds, 1tsp cum

3tbsp oil, 1tsp red chilli powder

AaAaAeAa-tsp turmeric powd

1tsp garam masala, salt -- to taste

2tsp lemon juice

2tbsp chopped coriander

Method

Heat oil in a pan, add cumin and mustard and allow them to splutter. Add ginger garlic paste and fry for 2 minutes. Add onions and fry till they get golden brown. Add tomato and saute until the moisture dries up and the raw smell goes off. Add chilli powder, garam masala, curry leaves and turmeric. Saute until the raw smell has gone. Add chopped mushrooms, peas and salt. Fry on a medium flame till you begin to get an aroma of mushrooms -- about 2 minutes. Cover and simmer till the mushrooms are cooked, stirring once in between. Add lemon juice and serve garnished with chopped coriander. Enjoy with rotis or steamed rice.
