More ways to enjoy an apple.

Classic applesauce (peels are loaded with antioxidants, Fiber, and flavor): Mix cored, chunked unpeeled organic apples (any variety) with a bit of water and sugar; simmer till tender; puree in a food processor.

Baked apples with pecans and cranberries: Slice tops (including stems) off 6 organic Cripps Pink apples. Core, put in an ungreased 9-by 13-in. baking pan, and fill with pecans and dried cranberries. Put tops back on apples. Mix 1 cup apple cider with 1/3 cup brown sugar and pour into pan; add a couple of cinnamon sticks. Bake at 375[degrees] for 30 minutes-Serve with the pan syrup.

Apple, cucumber, lime, and mint salsa: Cut 2 unpeeled organic green apples, 1 medium red bell pepper, and 1/2 English cucumber into small dice. Mince 1/2 jalapeno chile. Stack 4 mint leaves and cut into fine ribbons. Toss everything together with 1/4 cup lime juice, 2 tbsp. honey, and salt to taste.
