Mighty meats: we look at some of the products and companies making waves in the meat and poultry sectors.
Padley's range of products caters for current trends and can be cooked in many different ways. Its butterfly steaks (pictured above) are offered as a light alternative to steak and are 95% fat free, while it also supplies chicken fillet products such as Breaded, Chick 'n' Ferno and Crunchy Chick 'n' Mini.
The company has recently launched a range of ethnic Food to Share chicken products for buffets, starters, combos and snacking, It says that while the market has seen a number of potato and vegetable-based combo products, until now there has been nothing new in chicken. The launch of the ethnic Food to Share products is in response to consumers' requests for new and exciting flavours and is timed to coincide with the forthcoming Christmas party season.
The range brings together flavours of Mexico, India, Thailand and north Africa and includes Tortilla Chicken Wedges, with cheese and jalapeno peppers coated in tortilla crumb chips; Mini Chicken Naans, with sultanas and onion in a naan-style coating; Thai Chicken Cakes, with lemon grass, coconut, lime and coriander in a crispy coating; and Chermoula Chunks--roasted and seared chicken thigh chunks in a north African-style marinade.
Four of the products can be oven-baked or deep-fried in less than four minutes from frozen; the Chermoula Chunks can be oven-baked or microwaved from frozen in five minutes and can be eaten hot or cold. The range will be available nationwide from September. with the products packed in 2kg cases.
Plusfood says that its cook from frozen poultry and meat products for foodservice are ideal for the barbecue season.
Under its Friki brand, Plusfood supplies a range of added-value poultry. For example, it has two marinated butterfly chicken breast options: Garlic & Herb and Cajun. A plain butterfly chicken breast is also available. As an alternative, its Chicken Grill Steak has a pronounced roast chicken flavour and is perfect for serving in a bun, the company says.
The Fribo brand is best known for its burgers--such as All Rounder and 264 Beefburgers--and other added-value meat products, many of which are also suitable for barbecuing. Alternatives to traditional beefburgers are also readily available: for example, Chopsteaks have a high meat content and delicate seasoning, while Pork Range Ribs, available with BBQ or Chinese seasoning, provide another choice.
Bernard Matthews Foods has been busy developing new meat based products and refining existing dishes for the catering sector.
The company's Fine Dining By Bernard Matthews range, which includes a selection of individual entrees, is aimed at the premium end of the catering market, such as 'gastro-pubs', hotels, restaurants, business catering and the first-class travel sector. Meat and poultry dishes here include Moroccan Crusted Lamb Racks, Rolled Turkey Fillers with a Spinach & Ricotta Mousse and Cheese & Bacon Stuffed Chicken with Wild Mushroom & Tarragon Sauce.
The company has also added a Chicken Breast Roast to its selection of value-added roast meats for foodservice. Made of chicken breast meat formed into a 1.5kg joint, the Roast is convenient to cook from frozen or after defrosting, says Bernard Matthews. It is boneless, so is easy to portion and leaves no waste. There are five other joints in the Roast range: Turkey Breast. Turkey Leg, Gammon-style Turkey, Lamb and Pork.
The company also recently launched Pork Sunbeams (as reported in the May/June issue of Frozen & Chilled Foods)--these are aimed at the children's catering market and comprise shaped pork in batter and a Sweet & Sour sauce.
