Microbiological and Environmental Health Issues Relevant to the Food and Catering Industries.

MICROBIOLOGICAL and ENVIRONMENTAL HEALTH ISSUES RELEVANT to the FOOD and CATERING INDUSTRIES

(UK: CFDRA or Food Trade Press Ltd).

This text forms the Proceedings of a symposium held in February this year at Stratford-upon-Avon. It was organised jointly by the RA and the Public Health Laboratory Service.

Like all CFDRA symposium, the title of the event explains what subject area was covered and the papers show that even more. The various presenters spoke to the following headings: Microbiological food safety issues in the USA; Campylobacter - the food and water connection; Organisms of emerging significance; New concepts in food packaging; Microwaves in food processing, catering and domestic use; Irradiation - current and future applications worldwide; Catering and the 90's - science or art?; New and novel heat processing methods; Veterinary problems in the food chain; Processing equipment and hygienic design; Chilled foods - the manufacturer's responsibility; Environmental contamination of food - non microbiological; The role of the Environmental Health Officer; and European legislation - the consumer viewpoint.

Like all symposia, if you didn't attend because time was not available then by purchasing the proceedings you can catch up on a lot of what was discussed and said.
