I often see recipes these days calling for the use of crushed peppercorns. What is the best way of crushing them? Ron Morgan, Swansea Place a handful of black peppercorns in a clean cloth and rock a large heavy frying pan over them.

I know you like to serve pea puree with fish and chips in your restaurants. How can I make perfect pea puree at home? Gordon Walker, Reigate, Surrey It's really easy. Simply bring 500ml chicken stock to the boil. Add 1kg frozen peas, a small handful of mint, 1tsp sugar and 1tsp salt. Cook until tender. Remove the mint. Puree in a food processor and serve in a small dish with fish and chips.

What's the best way of making mashed potato? I have, in my time, eaten absolutely delicious, wonderfully puffy mashed potato and also hard, horrible lumpy stuff. What's the secret, Marco? Jane Howe, Kings Lynn, Norfolk I find that Desiree potatoes are best for making mashed potato. Peel 1kg potatoes and cut into 2.5cm cubes, add 8g salt to 1 litre of water and bring to the boil in a large pan. Poach the potatoes for 4-5 minutes, drain and pat dry with kitchen paper. Then mash with butter. I like to add a little double cream, too.
