Four units will be located in metropolitan Denver, including the prestigious Cherry Creek Mall, one in Boulder and the other in Colorado Springs. "We believe that the Colorado marketplace offers significant opportunities based on its demographics and its consumer demand for healthy and nutritious foods," stated Lance Mortensen, Monterey Pasta Co.'s chief executive officer. According to Mortensen, Monterey Pasta Co. plans to develop 20 restaurants in Colorado by the end of 1995.
Mortensen also announced that the company will begin its retail grocery store distribution in the Colorado marketplace this year. "Significant economies of scale and operating synergies will be achieved through combining the company's grocery store sales with its restaurant operations in the same regional markets," stated Mortensen.
