 MAYTAG CHEESE: HOLIDAY CHEERS WITH WHOLESOME CHEESE

 Maytag Blue has been pleasing cheese lovers and great chefs for over 50 years. And in a world of change, it's nice to know that nothing has changed about Maytag Blue. This rich, creamy, blue-veined cheese, with its unique, tangy taste, has been made right down on the farm in Newton, Iowa, since day one. The cheese factory is still small, set in rolling hills an hour away from Des Moines. Every morsel of Maytag Blue is made by hand and fully aged in caves placed in the side of a hill. The cheese company is still totally family run, now in its third and fourth generation of Maytags.
 Following is an elegant and simple soup recipe with a little crunch and a definite, but not overpowering, blue cheese flavor which makes an elegant beginning or a hearty meal itself.
 BLUE SATIN SOUP
 4 T butter
 1/2 C flour
 4 oz. Maytag Blue Cheese
 1 C light cream
 1/4 C each, finely minced green onion, green pepper and celery
 1 can chicken broth (14-oz.)
 1 C milk
 2 oz. dry sherry
 freshly ground pepper
 Melt butter in heavy saucepan, add vegetables and saute very slowly until soft but not brown. Add flour and cook over low heat a few minutes until flour is cooked but not brown.
 Add warm chicken broth, stirring constantly to prevent lumps, and simmer two minutes.
 Add crumbled Maytag Blue Cheese and stir until smooth. Add cream and milk and heat to serving temperature. (Do not boil.)
 Add sherry, freshly ground pepper to taste, and serve garnished with sour cream, chives or croutons.
 Maytag cheese is offered in 2-pound or 4-pound wheels or in a variety of convenient, individually foil-wrapped wedges.
 Well, maybe something has changed. In addition to its world-famous blue cheese, Maytag is offering several other fine cheeses in this year's catalogue. A few years ago, Maytag began making natural white cheddar, and this year the cheddar is being offered in a variety of sizes as well as in combination with Maytag Blue. Swiss and Edam cheeses add to the variety.
