Kemper becomes new Dock Street brewmaster

Willis Kemper, a chemical engineer who has been active in the microbrewery field since 1984, has been brewmaster for the Dock Street Brewing Co. and Restaurant in Philadelphia.

In his new position, Kemper will work with Dock Street president Jeffrey Ware on the formulation of recipes for the beers to be served at the restaurant. He will also oversee the beer's production at the on-site brewery.

Prior to joining Dock Street, Kemper held a similar post with the Weeping Radish Brewery in Durham and Manteo, NC, and directed the installation and start-up of the Fest House Brewery in Virginia. He also served as president and brewmaster for Kemper Brewing Co., which he cofounded in Bainbridge Island, WA.

Dock Street opened in October, but Kemper has spent the past year designing and engineering the brewery works. Among the unusual features in the brewery is a two-vessel copper brewhouse that allows the brewmaster to work with whole grains instead of the more commonly used malt syrups and extracts.
