Keeping the tradition with Caffe D'arte.

Walking through downtown Seattle, Washington, the traveller comes across many coffee houses, and to the layman, all the coffee served is pleasurable. But to the experienced coffee connoisseur, certain shops rise above the masses and Caffe D'arte certainly ranks as one of the elite few.

Caffe D'arte is the new name to the coffee house formally known as Caffe Mauro, named after the company's founder and vice president, Mauro Cipolla. Everyone in Seattle seems to know Mauro, especially his customers, and the sound of his name continually rings throughout the shop as regulars pile in for their daily dosage.

One issue that is brought up over and over again in the coffee industry is one of consistency. If you don't serve a good, consistent cup, your customers will not return. For Caffe D'arte, which translates to "The Art of Coffee", tradition and consistency are household words.

Mauro learned the art of coffee roasting in Italy and brought his comprehensive eduction to Seattle. He started roasting coffee in his garage in 1985 and opened up his retail store a few years ago. Currently servicing over 1,000 accounts in Seattle and the surronding areas, Caffe D'arte has tripled in size over the last three years.

So, what's his secret? Well, according to Mauro, there are three variables to a quality cup-the coffee, the blending, and the roasting.

"The key is not buying specific types of beans, but what works for you," said Mauro. "Nature changes on you," he said, referring to the crops, "always dictating what and when you should buy."

"The history of American roasting is very young," said Mauro, referring to why some small roasters, interested making a profit, are cutting corners and going out of business. "The shortcut is not part of the Italian know-how." To get the best outcome, there must be a marriage of the coffee and the roasting equipment, he said.

This young coffee artisan and entrepreneur is also interested in educating the public on the wonders of coffee. Mauro recently launched the "Academy of Coffee", a weekly educational session that normally draws a group of 30-50 interested people. Whether you're interested in coffee marketing or the difference between an espresso and a latte, everyone walks away from the session having learned something about the brew, and, according to Mauro, a "lifetime of learning" is what the art of coffee is all about.
