Irish Soda Bread

3 cups all-purpose flour

1/2 cup sugar

1 tablespoon baking powder

1 teaspoon baking soda 1 1/2 cups currants or raisins 1 3/4 cups buttermilk

2 large eggs

3 tablespoons melted butter or

margarine

1/2 teaspoon vanilla

In a large bowl, mix flour, sugar, baking powder, baking soda, and the currants. In a small bowl, beat to blend buttermilk, eggs, 2 tablespoons butter, and vanilla. Add to flour mixture and stir until evenly moistened.

Spread in a buttered 10-inch-diameter ovenproof frying pan or cheesecake pan with removable rim; drizzle with remaining butter.

Bake in a 350 [degrees] oven until bread is well browned and pulls from pan sides, about 45 minutes. Serve warm or cool. Makes 1 loaf, about 2 1/2 pounds.
