Since you were wee, your mum has always treasured those gifts from you that you've made yourself - from finger paintings to that IKEA bookcase.

Whatever age you are now you can still make her something special for Mother's Day tomorrow - a cake to share.

Sophie said: "Treat your mum to this delicious sponge cake on her special day. Get the kids involved with decorating the top and make it really special with a personalised message and decorate with fresh fruit.

"Serve with a generous pouring of cream or dollop of mum's favourite ice cream.

"A delicious surprise this Mother's Day."

Mother's Day sponge cake Method Pre-heat oven to 180C. Butter inside of 20cm sandwich tin and line with baking paper.

Cream the butter and 200g of caster sugar until it is pale. Slowly add the eggs, continuing to beat. Sift in the flour and baking powder, add milk then mix until smooth. Pour mixture into lined sandwich tin then place in the pre-heated oven. Bake for 20-25 minutes. The sponge will be ready when it's a golden brown colour and springs back when pressed. Turn out onto a wire rack to cool.

For the filling, whip double cream, sugar and vanilla together until it forms peaks. When the cake has cooled, cut in half horizontally. Spread jam on one cut side then top with the whipped cream mixture. Place other half of sponge back on top. Spread with jam and, using a palette knife, cover the outside of the sponge with the whipped cream mixture.

For the garnish, roll out the royal icing for the top of the cake. Use cut strawberries to garnish the top of the cake.
