India : Chef Association of Five Rivers hosts cooking workshop using special breed of poultry.
A chef organization of Punjab associated with Indian Federation of Culinary Associations (IFCA), Chef Association of Five Rivers, hosted a cooking workshop using a special breed of poultry, Kadaknath/Kalamansi, at University Institute of Hotel & Tourism Management, Panjab University, Chandigarh, last week.
The chicken which is fully black - black plumage with a greenish iridescence, black legs and toe nails, black beak and tongue, black comb and wattles, black meat and bones and even dark organs comes from a high value Indian poultry race and has high curing properties.
Only one farm in Punjab now breeds this poultry breed in India.
Chef Sanjiv Verma, Vice President , CAFR unveiled a research paper on this special breed of poultry underscoring that this particular breed of poultry is said to have been curing, pulmonary problems tuberculosis (TB), heart diseases, neurasthenia ( a condition of nervous debility supposed to be dependent upon impairment in the functions of the spinal cord), and children osteomalacia ( a condition marked by softening of the bones).
