What's great about scotch bonnet chilli as an ingredient?
Besides its renowned spicy kick, scotch bonnet chilli adds a fruity aromatic depth to recipes giving them a soulful Jamaican vibe.
How readily available is this ingredient in this region?
Scotch bonnet chillis aren't readily available within the region, however I have seen them at a few local markets. Where we can't source locally, we have been able to import from various channels in order to keep the dishes authentic.
What should you look out for when buying this ingredient?
The scotch bonnet chilli should be bright yellow with a waxy exterior. The flesh should be firm and of course it should have the distinctive scotch bonnet aroma when you cut into it.
Any challenges with using it?
They can be too hot at times so we need to scale recipes back based on the time of year. During the summer, the chillis get more sunlight so are famously hotter during these months.
What's the best way to use scotch bonnet chilli?
It's great in marinades as it also acts as a seasoning, allowing the meat to taste truly authentic.
