IFT'S thrill ride in Orlando: the Institute of Food Technologists will hold its annual conference and trade show June 24-28.

The Institute of Food Technologists (www.ift.org) will hold its annual IFT Food Expo conference and trade show Saturday June 24 through Wednesday, June 28 at the Orange County Convention Center in Orlando Fla.

The event begins with awards and a networking reception Saturday evening. Sunday begins with a 9 a.m. keynote address by the Food Network's "Good Eats" star Alto Brown, Brown, a 2003 James Beard Award winner, author of the books and "Iron Chef America" alumnus, is known for bringing an inimitable and entertaining flair to food science.

The scientific program begins Sunday afternoon and runs throughout on Wednesday. This year's scientific and technical program includes 100 sessions and more than 1,400 presentations comprised of symposia, oral and poster presentations, technical sessions and new products and technologies. Themes for 2006 include bioterrorism and food defense; functional foods; globalization and food allergens.

On the floor

An IFT innovation--one that other conference-trade show combos would do well to emulate--is the daily hiatus of educational sessions in order to allow attendees worry-free time on the expo floor. Billed as "unopposed expo hours," they run noon-2:30 p.m. What a relief to stroll the aisles without the nagging feeling of missing out on some of the latest findings in food science.

And while you're on the exhibit floor, look for 500 ingredient companies and more than 2,000 exhibit booths showcasing the latest in products, technologies and applications, innovations, tools and techniques.

A number of specialty pavilions will showcase similar products and services for niches of the food industry. You'll find the information on hottest trends at areas such as the Organic Food Ingredients Pavilion, the Healthy Food Ingredients Pavilion, the Food Safety & Quality Pavilion and the International Pavilion.

The Healthy Food Ingredients Pavilion will feature the latest developments in nutraceutical, functional and organic products. The Food Safety & Quality Pavilion will address some of the biggest concerns of consumers and food processors. The newest instruments, services, processing and packaging technologies of food safety will be exhibited.

The Organic Food Ingredients Pavilion is new this year and focuses on the global organic mega trend. With this once niche market experiencing its second decade of double-digit growth, organic foods and ingredients merit their own IFT venue for the companies offering certified organic products.

Thinking of taking your domestic trade to the next level? Then the Food Ingredients international Pavilion is a passport destination. Attendees will find vendors who can meet overseas needs.

Seeking an extra level of international information? Don't miss the all-day (9 a.m.-4:30 p.m.) Global Food Safety and Quality Conference Wednesday, June 28. For a $50 admission (lunch included), this conference features programming on food safety in Latin America and the impact on global trade, co-sponsored with the Latin American and Caribbean Association of Food Science and Technology. The presentations will address "the challenging issue of decision-making when the science is incomplete."

A timely collaboration with the Atlanta-based Research Chefs Assn. (www.culinology.org) sets the stage for a series of IFT-RCA culinology demonstrations June 25-27 at 1 p.m. A single theme will be represented overall, the so-called "grab and go" trend. Recognizing that "no one single grab and go option will suit all diners," food scientists will work with RCA chefs and serve up one grab-and-go culinary innovation each day.

Also new this year will be a "Point/ Counter-Point" session. The inaugural topic, "Where Science Meets Funding" is touted as "the first-ever event focused on identifying and increasing federal funding sources for food science." Attendees can get research and funding questions answered by government agency representatives from the National Science Foundations, Dept. of Energy, USDA, EPA and other institutes and agencies.

Some program highlights include: the 2006 New Products & Technologies program. Made up of 40 presentations within four session tracks, the program's host companies present "cutting-edge information on newly commercialized technologies that can be applied--right now--in your business."

On Sunday, June 25 2:30-5:30 p.m. catch the Innovations in Nutritional Ingredients and Analytical Methods program. On Monday, 9 a.m.-noon enjoy a wrap-up of the latest in "Innovations in Processing, Packaging and Food Safety."

Another new event: At 10:30 a.m. Tuesday, visitors have a 90-minute opportunity to hob-nob with presenters at their table-top poster displays via the Emerging Ingredients Showcase after the oral presentations at the "Innovations in Functional Ingredients" session.

If the above schedule isn't interesting enough, come early for the series of pre-meeting short courses at the nearby Rosen Plaza Hotel. Covering healthy foods, food safety, product design, sanitation, food-powder technology and high-potency sweeteners, they'll be held Friday and Saturday, June 23-24.

Among the expo, sessions and networking, this year's IFT show is essential for anyone wanting to stay on the cutting edge of food and ingredient science.

ORLANDO HAS SOME DIVERSIONS, TOO

While we're certain you'll use most waking hours immersed in the IFT show, what if you do find a few hours to kill? While a $67 all-day/one park ticket may be a little pricey for a few hours of fun, we're told you can find $47 tickets for after 2 pm admission to either Walt Disney World or Universal Studios and $45 tickets good for after noon at SeaWorld. Disney's Magic Kingdom appears to be open till midnight during the show; Universal Studios closes at 9 p.m. through June 25 and at 10 p.m. beginning the 26th. In the convention center, ask for the Guest Services Desk of the Orange County Convention & Visitors Bureau. You must display your show badge to get the discount, and the parks themselves do not sell these tickets. However, rides to the two main theme parks are not available--you'll have to get a cab or ask at your hotel desk. Another Guest Services Desk carries menus and can make dinner reservations.

The I-Ride trolley stops in front of the Orange County Convention Center as it travels up and down International Drive. Take it to shopping, dining and the way down to SeaWorld.
