This new book is designed as a definitive list of food abbreviations, terms, terminologies and acronyms. Dr Gould has drawn on his experiences from the last half century working in the food industry to compile the text.

The first section sets out the abbreviations and acronyms in use in the text, and this is followed by the A to Z index, which starts at 'a la' and runs through to 'zwieback'. In between there is a fascinating collection of terms and terminologies as the author describes them. Each one is defined briefly; in the case of items like 'can', there is a longer description of all the attributes running to two and a half pages. At the back of the book there are no fewer than twenty tables of useful facts and figures, like the pH value of commercially canned foods.
