Lilac & Lavender Symphony Serves: 4 Prep time: 10 mins Cook time: 10 mins Ingredients 4 glasses of water 4 tbsp lavender flowers, dried 4-5 black peppercorns 2 A' tbsp castor sugar 2 tbsp honey 2 tbsp lavender syrup 2 lemons Ice cubes, to serve Lemon slices and gold dust, for garnish Method Boil water with 3 tbsp lavender flowers and peppercorn. Remove and cool. Strain and keep in the fridge. Grind castor sugar with 1 tbsp lavender flowers to make lavender sugar. Pulse water with honey, lavender syrup and lime juice. Add ice cubes. To serve, rub the lemon slices along the rim of the serving glass and roll lavender sugar around in the glass. Keep the glass in the fridge for 20 minutes to allow the sugar to set. Pour in the drink, and garnish with lemon slices and gold dust. Serve chilled.

Rose & Raspberry Cooler Serves: 4 Prep time: 10 mins Cook time: 10 mins Ingredients 1 cup raspberry A' cup fresh rose petals, washed A' cup sugar 2 cups water Pinch of salt 2 tbsp rose syrup 1 tsp rose water 2 tbsp lemon juice 1 tsp ginger juice Ice cubes, to serve Raspberry and fresh rose petals, for garnish Method Heat a pan and add raspberry with rose petals and sugar. Once the sugar starts melting, add water and salt. Cook for 2 minutes. Remove from heat and cool. Blitz in a blender and strain. Add rose syrup, rose water, lemon juice and ginger juice. Chill and serve on a bed of ice. Garnish with raspberry and rose petals. Serve.

Hibiscus Melon Melody Serves: 4 Prep time: 10 mins Cook time: 10 mins Ingredients 2 cups water A' cup hibiscus flowers, dried 7-8 fresh mint leaves, plus extra for garnish 2 green cardamoms 2 cloves A' cup brown sugar 4 cups watermelon juice 1 Sprite, optional Pinch of black salt Method Boil water with hibiscus flowers, mint leaves, cardamoms and cloves for 3-4 minutes. Remove, strain and add sugar. Keep this in the fridge to chill. To serve, mix with freshly prepared watermelon juice, Sprite and salt; stir and add ice cubes. Pour into glass bottles and garnish with mint leaves. Serve.

Chamomile Ice Tea Serves: 4 Prep time: 10 mins Cook time: 10 mins Ingredients 2 tbsp dried chamomile flowers 2 orange cinnamon tea bags 250 ml water 2 tbsp honey A' cup orange juice Ice cubes, to serve A' cup blueberries, for garnish 1 orange, sliced Method Add chamomile flowers and tea bags to a tea pot. Boil water in a pot and remove from heat; cool slightly before pouring in the teapot. Cover with a lid and steep the chamomile tea for about 7-8 minutes. Remove the tea bags from the pot and strain. Add honey and mix well. Let the tea come to room temperature, then keep in the fridge to chill. To serve, mix with orange juice and ice cubes. Garnish with blueberries and orange slices.
