First-Ever Escargot Sushi Roll to Debut Tonight.

Chef Hiroyuki "Zama" Tanaka of Philadelphia's <a href="http://www.zamarestaurant.com/">Zama restauran</a>t introduces the Bibou Roll today - the world's first snail roll.&nbsp; The roll was a collaboration between Zama and chef Pierre Calmels of <a href="http://www.biboubyob.com/index.html">Bibou</a> (hence the name). It debuts at Zama on<a href="http://www.ibtimes.com/articles/151149/20110524/escargot-france-philadelphia-national-escargot-day.htm"> National Escargot Day</a>.

The roll showcases extra large escargot sauteed with shallots and shiso in a soy dashi butter, over an open-faced tempura haricots verts and fennel maki topped with shelled edamame and shiso. A portion of the proceeds from sales of the roll will go to <a href="http://giving.chop.edu/site/TR/Events/General?fr_id=1030&pg=tgreeting">The Children's Hospital of Philadelphia (CHOP).</a>
