Family Life: Small portions.
Ingredients: 175g self-raising flour 1/2 tsp baking powder 175g butter, softened 115g Fruisana Fruit Sugar (fructose) 3 medium eggs 75g desiccated coconut Method: Sieve the flour and baking powder into a bowl.
Add the butter, Fruisana Fruit Sugar, eggs and coconut.
Beat with a wooden spoon for two to three minutes until blended and well mixed.
Spoon the mixture into a greased and lined deep 18cm (7 inch) round cake tin.
Bake in the oven: electric 180*C, fan assisted 160*C or gas mark 4 for 1-1 1/4 hours, until well risen and golden.
Leave in the tin for five minutes before turning out onto a cooling rack.
When cold, store in an airtight tin.
