Raspberry waffles You'll need a waffle pan or waffle iron to make this yummy dessert - served with fresh raspberries and refreshing sorbet to keep it low in ProPoints PROPOINTS(r) VALUE: 6 SERVINGS: 4 PREPARATION TIME: 10 min COOKING TIME: 10 min LEVEL OF DIFFICULTY: Easy Ingredients | 125g (4.4oz) white, plain flour | 1/2 tsp bicarbonate of soda | 1/2 tsp salt | 230 ml (7.7oz) buttermilk | 1 medium egg | 1/2 level tsp vanilla extract | 8 sprays of calorie controlled cooking spray like Frylight | 1 level tsp icing sugar | 200g (7oz) raspberries | 200g (4x50g) raspberry sorbet Instructions | Sift the flour, bicarbonate of soda and salt into a large bowl. Add the buttermilk, egg and vanilla and beat with a whisk to make a smooth batter.

Leave to stand for 30 minutes. | Spray a waffle pan or waffle iron with calorie-controlled cooking spray. Add 2tbsp of batter to each waffle section and cook for one to two minutes until the underneath is golden brown. Turn over to cook the other side for one to two minutes. Repeat until all the batter is used up.

Serve three waffles per person, sprinkled with icing sugar and topped with raspberries and a scoop of raspberry or lemon sorbet.
